Egusi Soup (Melon Seed Soup)

Egusi soup is a rich Nigerian dish made with ground melon seeds, vegetables and meat or fish. It’s filling and full of flavour.

Ingredients

  • 2 cups ground egusi (melon seeds)

  • Palm oil

  • Assorted meat or fish

  • Stock cube

  • Crayfish

  • Spinach or ugu leaves

  • Pepper and onions

  • Salt to taste

Method

  1. Boil meat with seasoning until tender.

  2. Heat palm oil and fry pepper mix.

  3. Add egusi and stir until thick.

  4. Pour in stock and cooked meat.

  5. Add vegetables and simmer gently.

Serving suggestions

Best served with pounded yam, eba or fufu.
