1 kg chicken pieces

1 red bell pepper

1 scotch bonnet

1 onion

2 cloves garlic

1 tsp paprika

1 tsp black pepper

1 tsp thyme

Salt to taste

2 tbsp vegetable oil
Method

Season chicken with salt, thyme and black pepper.

Boil until tender, then grill or oven-bake until golden.

Blend peppers, onion and garlic.

Fry blended mixture in oil until thick.

Add chicken and toss until coated.
