Nigerian Peppered Chicken

Nigerian Peppered Chicken

Ingredients

  • 1 kg chicken pieces

  • 1 red bell pepper

  • 1 scotch bonnet

  • 1 onion

  • 2 cloves garlic

  • 1 tsp paprika

  • 1 tsp black pepper

  • 1 tsp thyme

  • Salt to taste

  • 2 tbsp vegetable oil

Method

  1. Season chicken with salt, thyme and black pepper.

  2. Boil until tender, then grill or oven-bake until golden.

  3. Blend peppers, onion and garlic.

  4. Fry blended mixture in oil until thick.

  5. Add chicken and toss until coated.

Serving suggestions

Serve hot with chips, fried yam or cold drinks.
